Where do I start about these apple crisp oatmeal cookie cups? Wow! That pretty much sums it up. This little dessert cups are sure a treat. It’s like combining two of the classic comforting, feel good desserts – apple pie and oatmeal cookies, and making some thing that is out of this world. Let me just start by saying they make the ultimate coffee break snack. (as my co-workers can attest to)

I give all the credit to Olivia at Liv for Cake for coming up with this little gem of an idea. Amazing! I did decide to use my own recipe for the oatmeal cookies and apple pie mix as I knew my friends and family already loved the spicing and I was making them for a special occasion so I wanted to make sure they loved them.

Honestly tho, you take the classic oatmeal cookie, make it into a crispy oatmeal cup and fill it with homemade apple pie filling. Then just for good measure, I topped it with caramel sauce. (ok, I did get a little lazy and used a bottled caramel sauce) If you are short on time or ambition (it’s been known to happen for me too), grab a can or premade apple pie filling.

I loved how I could make all the components of these apple crisp oatmeal cookie cups and keep them overnight then assemble them right before serving. I kept telling my co-workers to put these little treats in the microwave for 20 seconds to warm them up but I guess no one could wait a few more seconds… they were like, “get in my belly”.

I was able to serve apple crisp oatmeal cookie cups up with a little more splendor at home to my family. I may have added a scoop of vanilla ice cream on the side, a dollop of whipped cream on top and an extra drizzle of the caramel sauce all over everything just for good measure before handing them over to be inhaled. Honestly, I don’t think my husband breathed for the 2 minutes it took for the cookie cups to get from the plate to his tummy.

I’m also going to add these to my freezer meal list (under the dessert category, or breakfast…yeah, I can totally justify that) because the oatmeal cookie cups would be super easy to make up a few batches to freeze then defrost when I need them. Whip up a batch of homemade pie filling (or grab a can opener as previously mentioned) and you are cruising!

Apple Crisp Cookie Cups

Ingredients

Apple Pie Filling:

  • 4 cups apples , peeled & chopped
  • 1/2 tablespoon lemon juice
  • 1/2 c brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 cups water

Oatmeal Cookie Cups:

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup butter , soft
  • 3/4 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 cups rolled oats
  • Caramel sauce (optional but good)

Instructions

Apple Pie Filling:

  1. To make the apple pie filling, peel, core and chop the apples into bite sized pieces.
  2. Place the chopped apple in a bowl and toss with lemon juice to prevent browning.
  3. In a medium pot over medium heat, combine the apples, sugar, cornstarch, cinnamon, salt and water. It may not look there is enough water, but there is.
  4. Bring to a simmer and allow it to cook until the apples are just turning tender. It took me about 20-25 minutes. Time will vary depending on the temperature.
  5. Remove the pot from the stove and allow to cool completely.
  6. Transfer to a mason jar until you are ready to assemble your cookie cups. Store in the fridge if not using the same day.

Oatmeal Cups:

  1. Preheat the oven to 350 F.
  2. Combine the flour, baking soda, salt and cinnamon in a small bowl.
  3. In a separate bowl, beat the butter, sugar, brown sugar, eggs and vanilla until light and fluffy.
  4. Gradually beat in the flour mixture. Add the oats and stir until well combined.
  5. Spoon about 2 tablespoons of oatmeal mixture into a very well greased muffin pan.
  6. Press the mixture up the sides of the muffin wells and along the bottom to create a cup.
  7. Bake in the oven for 15 minutes. When you remove the oatmeal cups from the oven, use a pastry tart tamper or some other narrow object with a flat end to flatten the inside of the cup so you can fit more filling.
  8. Allow the oatmeal cups to cool enough so you can comfortable handle before transferring to a cooling rack. Store in an air tight container until you’re ready to assemble.
  9. When you are ready to assemble, spoon the apple pie filling into your oatmeal cups.

To assemble:

  1. Drizzle with caramel sauce. Serve with ice cream, whip cream or a hot cup of coffee. All these options are completely optional but absolutely divine.
  2. I recommend assembling these the same day you plan on serving them. They do keep well for a few days if not assembled.
