These Banana Milkshake Cupcakes are show stoppers. Seriously. Just look at them! They are worth every minute invested in the kitchen. Honestly though, if you’re going to make amazing cupcakes, you need to make these spectacular Banana Milkshake Cupcakes.

Sometimes it’s tricky making light and fluffy cupcakes as decadent as boxed cake mixes. So why not take a short cut and start with… a box of cake mix! Then you add in the flavours, like banana, and proceed from there. These cupcakes are topped with colored buttercream icing but you can also mix it up and make strawberry or raspberry flavored icing before drizzling over the chocolate and topping it with a cherry.

These banana cupcakes are so tasty I was popping them in my mouth before they were even frosted. I couldn’t get them to cool down fast enough for me and I wanted to sample them right away. After topping the cupcakes with the icing and decorating them with the melted chocolate, sprinkles and cherry, I thought it resembled a milkshake so I decided to call these amazing creations Banana Milkshake Cupcakes. They were inspired by Your Cup of Cake’s banana split cupcakes but I switched it up quite a bit to make it easier to make. (you gotta check out their cupcakes, they are out of this world pretty)

I made these Banana Milkshake Cupcakes the same day as my Chocolate Cupcakes with Chocolate Covered Strawberries. All my other cupcakes paled in comparison to these lovely cupcakes. There’s something about pretty cupcakes that just make a person’s day! Whether it be for a Birthday, wedding shower, or just because – cupcakes are like holding happiness in your hand. Am I right?

The real question is this: how do you eat your cupcakes? These pretty little packages have so many layers of goodness, it’s hard to decide. Do you take a giant bite from the side so you get some icing and cupcake in the same bite? Or would you eat it like my daughter and slowly disassemble it from the top down, licking all the icing off before finally eating the cakey part last? However you enjoy them, have no doubt, they will be enjoyed.

Banana Milkshake Cupcakes

Ingredients

  • 1 Box vanilla cake mix
  • 2 large bananas , ripe
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup sour cream
  • 2 tsp vanilla extract
  • 1 cup butter
  • ¼ cup whipping cream
  • 1 tsp vanilla extract
  • 2-3 cups icing sugar
  • ½ cup chocolate chips
  • Colored sprinkles
  • Maraschino cherries

Instructions

  1. Preheat the oven to 350 F and line your cupcake trays with cupcake liners.
  2. Pour the cake mix into a large bowl, stir to break up any large clumps. Mash the bananas using a fork and set aside. Add the eggs, oil, sour cream, vanilla extract and mashed bananas to the cake mix. Mix together until smooth.
  3. Using an ice scream scoop, fill the cupcake wrappers 2/3 full. Bake for about 15 minutes at 350 F. Allow them to cool in the tray for 10 minutes before transferring to a cooling rack to cool completely before adding the icing.
  4. For the icing: whip the butter until it turns white and fluffy. Add in the vanilla extract. Whip for an additional minute. On a low speed, add in the whipping cream, slowly increasing speed. Whip for a few minutes until mixture holds a stiff peak.
  5. Gradually add in the icing sugar one cup at a time until you reach the desired consistency. Add food coloring to your icing and mix until the color is evenly distributed. Pipe your frosting on top of your cupcakes and place in the fridge to firm up.
  6. Melt the chocolate in the microwave. Allow the chocolate to cool for a few minutes before drizzling it overtop of the icing. Add sprinkles and top with a cherry. Return them to the fridge to set.

  2. Adorable, Diana! These look perfect for a children’s party…or even for those young at heart. 😉 Sometimes you just have to use boxed cake mix, it’s actually really good!
