Mix together the dry ingredients in a medium bowl.
Whisk the wet ingredients together in a separate bowl.
Pour the wet ingredients into the dry and stir together until all the lumps are gone. Adjust the consistency with more buttermilk or flour as needed.
Heat a frying pan over medium heat and spray with a cooking oil. Spoon in pancake batter and cook on one side until bubbles appear in the middle and the edges appear dry. Flip and continue to cook until the centre of the pancake springs back when pushed gently.
