Bring water to a boil with salt and add rice. Cook rice over low heat until tender, about 45 minutes. Drain any remaining liquid.

Combine all the ingredients for the dressing in a mason jar and shake until well combined. Keep the dressing in the fridge until you’re ready to serve.

Combine the rice and the remaining salad ingredients in a bowl. Pour about half the dressing over the salad and stir. Cover and keep in the fridge until ready to serve. Toss right before serving and add more dressing if needed.
