Grilled Pork Skewers
  • 2 lbs pork tenderloin cubed
  • 1/2 cup lemon juice
  • 2 tbsp red wine vinegar
  • 2 tbsp fresh oregano
  • 1 tbsp fresh thyme
  • 1/4 cup olive oil
  • 1 tbsp garlic chopped
  1. Cut the pork tenderloin into 1 1/2" cubes and set aside.
  2. Place the remaining ingredients in a bowl and mix together.  Place the pork in the bowl and mix together. Let sit for a minim 4 hours or overnight.
  3. Soak wooden skewers for at least 1/2 hour.
  4. Heat your grill. Cook the meat until done. Serve with a side of salad or baked potatoes.
