Powerhouse Kale Salad with Blueberry Balsamic Dressing

2cupsBaby kale
1/2cupQuinoa, cooked
½cupEdamame beans, defrosted
¼cupPumpkin seeds
¼cupGoji berries
½cupBlueberries, fresh
1Sweet potato, peeled, diced & roasted
½Avocado, sliced
2tablespoonsHemp hearts
Dressing yield 1/2 cup
6tablespoonsextra virgin olive oil
1/4cupblueberries
2tablespoonsbalsamic vinegar
2tablespoonshoney
½shallot, diced
A few sprinkles of salt and pepper
Instructions
Adjust the amounts of each ingredient in the salad to your personal preference. You do not need to include all the ingredients; these are only recommendations for a super nutritious salad.
To prepare the sweet potato, peel and dice the sweet potato. Spread it across a parchment paper lined baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle on salt and pepper. Bake in a 400F oven for about 25 minutes until tender. Remove from the oven and allow it to cool down. Store in an airtight container in the fridge until ready to enjoy.
The Dressing
Place oil, blueberries, balsamic vinegar, honey and shallot into blender and puree until smooth. Pour through a small fine strainer to get rid of small bits of blueberry skin. Season with a pinch of salt and pepper.
