Apple Crisp Cookie Cups
Apple Pie Filling:
  • 4 cups apples , peeled & chopped
  • 1/2 tablespoon lemon juice
  • 1/2 c brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 cups water
Oatmeal Cookie Cups:
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup butter , soft
  • 3/4 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 cups rolled oats
  • Caramel sauce (optional but good)
Apple Pie Filling:
  1. To make the apple pie filling, peel, core and chop the apples into bite sized pieces.
  2. Place the chopped apple in a bowl and toss with lemon juice to prevent browning.
  3. In a medium pot over medium heat, combine the apples, sugar, cornstarch, cinnamon, salt and water. It may not look there is enough water, but there is.
  4. Bring to a simmer and allow it to cook until the apples are just turning tender. It took me about 20-25 minutes. Time will vary depending on the temperature.
  5. Remove the pot from the stove and allow to cool completely.
  6. Transfer to a mason jar until you are ready to assemble your cookie cups. Store in the fridge if not using the same day.
Oatmeal Cups:
  1. Preheat the oven to 350 F.
  2. Combine the flour, baking soda, salt and cinnamon in a small bowl.
  3. In a separate bowl, beat the butter, sugar, brown sugar, eggs and vanilla until light and fluffy.
  4. Gradually beat in the flour mixture. Add the oats and stir until well combined.
  5. Spoon about 2 tablespoons of oatmeal mixture into a very well greased muffin pan.
  6. Press the mixture up the sides of the muffin wells and along the bottom to create a cup.
  7. Bake in the oven for 15 minutes. When you remove the oatmeal cups from the oven, use a pastry tart tamper or some other narrow object with a flat end to flatten the inside of the cup so you can fit more filling.
  8. Allow the oatmeal cups to cool enough so you can comfortable handle before transferring to a cooling rack. Store in an air tight container until you’re ready to assemble.
  9. When you are ready to assemble, spoon the apple pie filling into your oatmeal cups.
To assemble:
  1. Drizzle with caramel sauce. Serve with ice cream, whip cream or a hot cup of coffee. All these options are completely optional but absolutely divine.
  2. I recommend assembling these the same day you plan on serving them. They do keep well for a few days if not assembled.
