Chocolate Chip Carrot Cake
Ingredients
Cake
  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 cup sugar
  • ½ cup vegetable oil
  • 4 eggs
  • 2 tsp vanilla extract
  • 3 cups finely grated carrots
  • 1 ½ cups chocolate chips
Cream Cheese Icing
  • ½ pkg (8 oz) cream cheese, softened
  • ¼ cup butter , softened
  • 1 ¼ cups sifted icing sugar
Instructions
  1. Preheat oven to 350° F. Lightly grease 10inch spring form pan. In a bowl, mix together flour, baking powder, soda, salt and cinnamon.
  2. In a larger bowl, stir sugar together with oil. Beat in eggs one at a time. Stir in 1 tsp of vanilla.
  3. Gradually beat in flour mixture. Then, stir in carrots and chocolate chips until just blended.
  4. Spoon the batter into the greased pan and smooth top. Bake for 55 to 60 minutes until cake starts to pull away from side of pan and cake tester comes out clean.
For icing:
  1. Beat cream cheese with butter, 1 cup icing sugar and 1 tsp of vanilla. If too thin, stir in more icing sugar, 1 tablespoon at a time. Remove cake from pan and spread with icing.
