Two years ago I posted my very first recipe on my blog! What a roller coast ride life has been since. What was originally started as a way to share my favorite recipes with friends and family has sent me down a road I never expected. My love for photography exploded into a passion and I was able to combine this new obsession with my love of food.
After self publishing a cook book with close to 100 of my family’s favorite recipes, I received so many requests for a copy I decided to sell copies to help raise money for my local Cancer Foundation. To date, I have raised over $1000. This blog started because one person asked the simple question “When are you writing your next cook book?” How could one simple question change my life so completely??
So on this day 2 years ago, I decided to share my recipe for Easy Man’s Cabbage Rolls Soup. Now my original intention was to post a new recipe every single day for a full year. Well I don’t think I even made it to the end of the month. My expectation was WAY too high. Now my aim is to provide a full year’s worth of easy family friendly recipes.
My personal goal is to share delicious recipes while improving my photography skills and meet other fabulous people who share the same passion for eating all while having the time of my life. Because if it’s not fun, what’s the point?
Last year around this time I was sick so my one year anniversary completely slipped by without even a mention. This year? I started planning at the beginning of the year. Which is a good thing because last week? I was sick. All. Week. Long. YUCK!
Weeks ago I decided to scratch off an item from my food bucket list (yes, I have one of those along with my regular Bucket List) and make a Ferrero Rocher Nutella Cheesecake. Oh yeah, I totally went there. There were a few different versions I wanted to try but I decided to go with My Evil Twin’s Kitchen’s recipe. This is not classified as an easy recipe so you’ll have to head on over to My Evil Twin’s Kitchen to get the recipe.
I used to make cheesecakes on a weekly basis while in college. Every Tuesday I would lug a baked cheese cake to school for our 4 hour spare and hang out in the library. I noticed our study group grew in numbers and even my teachers started popping by to see if we needed help. How thoughtful of them!!
So back to this sinfully decadent Ferrero Rocher Nutella Cheesecake. It has a crust full of crispy bits and crunchy roasted hazelnuts. The cheese cake part is flavoured with chocolate and nutella. And if that alone was not enough, there’s a Nutella hazelnut ganache I could eat by the spoonful. And I’m not ashamed to admit, I did eat it by the spoonful!
But the honesty doesn’t end there. I’m going to keep this real. Like, really, REAL. I am a normal, regular home cook with no training. I don’t think 3 hours with a Red Seal Chef gives me any credentials. Or the hundreds of hours I spent watching Anna Olson on TV. I just seem to have a knack for making delicious food and I love playing in the kitchen. People love to eat my food and I LOVE cooking for other people. If you walk in my house, I will feed you. (You’ve been warned)
This dreamy Ferroro Rocher Nutella Cheesecake was going to beat out all the other cheesecakes I’ve ever made in my entire LIFE!! It was going to be spectacular. It was going to be amazing! People were going to sing me praises after they had a single bite. The truth? That cake never even made it out of my house. Oh the shame.
I set aside a full day to make this cheesecake. The following day was picture day. Oh, this cake was a show stopper! I thought I was making something Anna Olson would be impressed by. I decided to try some new photography techniques but in the end I decided to keep it simple like most of Liv for Cake’s stunning photos and let the cake be the star attraction.
The moment of truth came when I cut into the cake for the slice shot: the cake was not cooked completely!
Oh the curse words that were uttered. My beautiful creation was ruined. RUINED I tell you. The shame. The disappointment. The anger. The frustration!!
Maybe I set the timer wrong? Or maybe it was because I had to run out the door just as my timer went off. I turned off the oven and let the cake sit in there for an hour or two while I was gone as the instructions indicated. I did a gentle jiggle test when I got home and it looked to be firm. Where did I go wrong??
So what did I do? I popped those Ferrero Rocher chocolates off the top of my cake and ate them. Then I grabbed a spoon and ate the ganache right off the cake. Then I ate the outside part of the cake that was cooked. Yes I did. It’s such a shame no one else had the pleasure of enjoying that cheesecake because it really was a delicious cheesecake. My main debacle now is this: do I check this Ferrero Rocher Nutella Cheesecake off my food bucket list and move on to something else? Or do I try it again?

Judging by the pictures that you posted, your cake looks totally fine. Perhaps a tad under-done but still, it looks perfectly creamy and delicious, so I wonder, why not eat it? You’re making it sound like it was a complete disaster, yet it appears like it was holding its shape just fine? To me, it looks like you totally nailed that cake. And what a stunner, too! Love your pics!
Haha! You’re must too kind! The outside of the cake was cooked well so it held it’s shape but when I cut into it, the inside slid out… like a runny egg yoke. What I did eat of it was absolutely delicious.
My friends tell me I need to make it again. This time I won’t rush myself out the door. 🙂
