Easy Chia Seed Pudding and a trip to the Sugar Bush

This Easy Chia Seed Pudding makes the perfect make-ahead breakfast or snack. Chia seeds are combined with Greek yogurt, fresh fruit and a drizzle of Ontario maple syrup for a delicious snack that will keep you full for hours. I store batches of chia seed pudding in my fridge in these cute little mason jars to enjoy at home or on the go.

I have a totally new appreciation for all the work that goes into that huge jar of maple syrup my aunt and uncle drop off each spring. There was a lot of love and effort that went into making that sweet nectar my family liberally pours over French toast and pancakes. I was able to relive a bit of my childhood when I accompanied my daughter’s class to the sugar bush.

I vaguely remember tromping through the bush with my classmates when I was younger. Or the experience of coaxing the hardening maple syrup off the snow with a popsicle stick. I never realized how truly fortunate I am to live in Northern Ontario and have access to this sweet golden liquid. Now I understand why tourists leave Canada with galloons of it tucked away in their suitcases.

My daughter’s class got to spend the morning at the sugar bush in a small community not far outside the city. The owner walked us around the property that has been in this family for over 125 years. He showed us how his ancestors used to collect the maple sap from the trees and how he still uses some of the tools that have been passed down through the generations. Fortunately with technology the process is much easier then it was years ago.

There’s still a lot of hard work that goes into collecting the sap and then boiling it down. Not to mention washing all the pails by hand. I’ve never been a fan of washing dishes and hand washing over 150 pails seems like it would be a big job. It was interesting to see the HUGE cast iron pot that hung over the fire which was apparently older than the owner. He boiled the syrup until it became like a caramel before pouring it over the snow for the kids to enjoy.

One of the perks of coming along with the class was I got to purchase a bottle of maple syrup before we headed home. (my yearly spring gift from my aunt and uncle only lasts so long so I totally wanted to take advantage of the opportunity) Besides drizzling maple syrup over our favorite breakfast items, I’ve also started using maple syrup as a sweetener to replace sugar. It certain does the trick with my apple harvest muffins and I also love to use maple syrup in my easy chia seed puddings for breakfast.

I love the versatility of chia pudding. I always make a few batches at the same time and they store quite nicely in little mason jars. I’ll pack one in my lunch or my kids will enjoy one for breakfast. I also love how healthy they are! One of those little secrets my kids will never be told. 😉

I’ve had an obsession with mason jars for years! I use them any possible way I can – especially if I’m using them to preserve food. Easy Chia Seed Pudding and a trip to the Sugar Bush

Ingredients

  • ¼ cup skim milk
  • ¼ cup Greek yogurt (vanilla or original)
  • ½ tablespoon maple syrup
  • ¼ teaspoon vanilla extract
  • 1 tablespoon of chia seeds
  • pinch of cinnamon
  • ¼ - ½ cup of fruit

Instructions

  1. Combine all the ingredients except the fruit in a mason jar and stir together. Place lid on the mason jar and store over night in the fridge.
  2. Wash and chop the fruit and top the chia seed pudding.
