It’s that time of year to make my super moist, super easy Chocolate Chip Carrot Cake recipe with that yummy cream cheese icing on top! Oh yes! I understand that carrot cake is not just limited to the Easter season but when I think of bunny season, I can’t help but think of carrot cake too!
My easy Chocolate Chip Carrot Cake recipe has always been a classic that tempt people to come back for seconds. I’ve been making this recipe for over 10 years and if this recipe is not fantastic enough already, you’ll be thrilled to know it freezes really well too! I know, right? That means I can make this easy carrot cake in advance and store it in the freezer until I need it. I wrap the cake tightly with a few layers of foil before storing it in the freezer. I remove the cake from the freezer and defrost it overnight in the fridge. DO NOT put the icing on the cake until after it comes out of the freezer. The cream cheese icing is just not freezer friendly (in my opinion).
Every year our Easter weekend is jammed pack full of visiting friends and family and eating delicious food. Good Friday always starts with a neighborhood Easter Egg Hunt. It’s so fun watching the gate fly open to the backyard and the children go scrambling all over the yard picking up the brightly coloured Easter eggs. What takes over an hour of meticulous set up by our gracious hosts is undone in a matter of minutes by the gleeful children.
What follows is a gathering that is as highly anticipated as the grand hunt for Easter eggs. Craft tables are strategically placed to entertain the children while the parents catch up on the last 12 months that have past. Hard-boiled eggs are dipped in coloured water then decorated with stickers. Small baskets are adorned with jewels and sparkles to hold the precious eggs and children disappear behind bunny masks they so carefully crafted.
To accompany all the activities, there is always a table of munchies people can enjoy. Everyone brings a little something to share for the event. I always look forward to sampling something new and delicious (and securing a recipe or two). It’s become mandatory over the years that I bring my Cinnamon Buns – fresh from the oven. I usually bring a second dish just so I can try some fun new recipe. Copious amounts of coffee are consumed by the cupful while we enjoy the delicious selection of goodies people bring for the special event.

Chocolate Chip Carrot Cake
Ingredients
Cake
- 2 cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tsp cinnamon
- 1 cup sugar
- ½ cup vegetable oil
- 4 eggs
- 2 tsp vanilla extract
- 3 cups finely grated carrots
- 1 ½ cups chocolate chips
Cream Cheese Icing
- ½ pkg (8 oz) cream cheese, softened
- ¼ cup butter , softened
- 1 ¼ cups sifted icing sugar
Instructions

Preheat oven to 350° F. Lightly grease 10inch spring form pan. In a bowl, mix together flour, baking powder, soda, salt and cinnamon.

In a larger bowl, stir sugar together with oil. Beat in eggs one at a time. Stir in 1 tsp of vanilla.

Gradually beat in flour mixture. Then, stir in carrots and chocolate chips until just blended.

Spoon the batter into the greased pan and smooth top. Bake for 55 to 60 minutes until cake starts to pull away from side of pan and cake tester comes out clean.
For icing:

Beat cream cheese with butter, 1 cup icing sugar and 1 tsp of vanilla. If too thin, stir in more icing sugar, 1 tablespoon at a time. Remove cake from pan and spread with icing.
