I may have gone a little cupcake crazy this past week. By a little, I mean a lot. I was on a mission to make some delicious and fancy cupcakes, and well, these Chocolate Cupcakes with Chocolate Covered Strawberries were one of the creations that came out of my kitchen this week. Along with many others. This time I was ready for all these cupcakes. I purchased cupcake gift boxes so it was easy to share these gorgeous creations after I was done taking pictures.
I have a new project I’ve been working with my son over the past few weeks. My son is just a teenager, still in high school but I can already see he has an entrepreneurial mind and it’s been fun to work with him on this project together. I get to do what I love best: bake and take pictures, and then I’ll hand off my pictures over to him to play around with a few ideas. I’m excited to see what he comes up with. I’m trying to be involved in as little as possible unless he comes to me with questions and he is still only 17.
There’s something absolutely amazing about being able to hand a box of pretty cupcakes to someone – their eyes light up. I was trying to explain it to a friend and the best I could come up with is, it’s a happy high. Sharing my baking with someone gives me a happy high.
I especially love sharing my baking with this lovely young lady that lives beside me. I don’t know how she manages to fit all her activities into her busy life, and honestly, I don’t know how her parents keep up either. Between her and her brother, watching the parent’s Facebook post updates makes me exhausted! I love that she’s always so excited when I drop goodies off at her place. She told me I was the best baker ever – flattery will get a person anywhere. Along with the fact her door is the closest one to my door, she’s always the first person on my list. You know when you can tell a person just has a kind heart? You can just see it in her face.
These delicious Chocolate Cupcakes with Chocolate Covered Strawberries have a sinful chocolate cakey base that’s then topped with marshmallow icing. Nestle a big, juicy strawberry on top of the icing and drizzle the entire thing with milk chocolate. Yes, it’s even better then it sounds. This is definitely one cupcake you will want to disassemble as you eat. Only the most talented, like my teenage son, can fit the entire cupcake in his mouth at once.

Chocolate Cupcakes with Chocolate Drizzled Strawberries
Ingredients
- 2 cups sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup butter , softened
- 1/2 tsp vanilla extract
- 1 1/2 cup icing sugar
- 1 (7oz) jar marshmallow fluff
- ½ cup chocolate chips
Instructions

Preheat the oven to 350 F and line your cupcake trays with cupcake liners.

Sift together the sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Combine the eggs, milk, oil and vanilla. Add the wet ingredients into the dry and beat on medium speed for about 2 minutes. Stir in boiling water. The batter will be very thin! Pour batter into prepared pans.

Using an ice scream scoop, fill the cupcake wrappers 2/3 full. Bake for about 22 minutes at 350 F. Allow them to cool in the tray for 10 minutes before transferring to a cooling rack to cool completely before adding the icing.

For the icing: whip the butter until it turns white and fluffy. Add in the vanilla extract. Whip for an additional minute until well combined. Add in the icing sugar then the marshmallow fluff. Frost your cupcakes as desired.

If using strawberries, clean strawberries with a damp cloth and place on top of the icing. Melt the chocolate chips in the microwave and drizzle the chocolate overtop of the cupcakes.

The cupcakes are beautiful! Giving baking away gives me a happy “high” too. We have wonderful neighbours too and I love to bring them treats or flowers from my garden.
