I find there’s something very ritzy about serving quiche for lunch. When I think of quiche I imagine of a group of my lady friends and I have gotten together for afternoon martinis and we’re munching on a light lunch of quiche and salad. Perhaps I read too many books. But a red apple martini does sound pretty yummy right now.
What I love about quiche is it’s a healthy lunch option that can be made ahead and eaten as needed. I’m always looking for ways to cut corners. If I can make a meal on Sunday and eat the leftovers for lunches during the week, I feel I’m already ahead of the game. That’s one less thing I need to worry about on weeknights. If you’re going to the gym and looking for a healthy lunch option or pre workout snack, crustless quiche is the perfect solution – veggies and protein. This also makes a fabulous vegetarian or gluten free option as well.
You can play around with the ingredients you put in your quiche. I can see chopped ham, red peppers or even crumbled bacon added to this quiche. Now, to fix this martini situation…
Spinach, mushroom & feta cheese crustless quiche
INGREDIENTS
1 pkg fresh mushrooms (8 oz)
1/2 tsp garlic, minced
2 tsp olive oil
1 handful of fresh spinach (approx 2 cups), coarsely chopped
6 large eggs
1 1/4 cups milk
2 oz feta cheese, crumbled
1/4 cup parmesan cheese
1/2 cup shredded mozzarella
salt and pepper
DIRECTIONS
- Preheat oven to 350 degrees F. Coarsely chop fresh mushrooms (slice, then chop). You don’t want your mushroom pieces too big. Heat olive oil in frying pan and sauté mushrooms and garlic together until mushrooms are tender. Drain mushrooms if you need.
- Layer chopped spinach in the bottom of a greased pie plate. Layer cooked mushrooms on top of the spinach. Sprinkle the crumbled feta cheese on top of that.
- In a separate bowl, whisk together the eggs, milk and parmesan cheese. Add salt and pepper to taste. Pour egg mixture into pie plate. Top with shredded mozzarella.
- Cook in oven for about 45 minutes until middle of quiche is firm and does not giggle.
Red apple martini
1 oz Sour Apple Vodka
1 oz Crown Royal
1 oz Cranberry juice
Pour ingredients over ice in shaker and mix well. Strain into chilled martini glass and enjoy!
