#41 – Hot Nacho Dip

I’m a huge fan of hot nacho dip. Before I had kids, if my husband was working a late shift on a Friday night, my dinner would consist of a plate of nachos or a dish of hot nacho dip and a glass of wine. Yes, dinner of champions. Couple this with a good book or movie and it was the perfect way to end a workweek.

I used to make this dip in small microwave safe dishes and bring it to work for lunches. So good!! The dip is quite filling with the hamburger meat and refried beans, so a little makes a great lunch. It will definitely make your co-workers drool. I may even be guilty of feeding it to my children now for a quick dinner.

An added perk is this dish freezes well too so you can make a few of them and keep them in the freezer and grab them for lunches when you need one. Its usually completely defrosted by lunch time and you just warm it in the microwave until it’s hot and bubbly.

If you want to make it extra fancy and special, top your dip with some finely chopped lettuce, tomato, pickled hot peppers or even black olives. A little scoop of sour cream, maybe some salsa. Jalapeño peppers if you’re feeling really adventurous. If it belongs on a nacho plate, it belongs on this dip. I promise.

You don’t have to keep this delicious dip all to yourself either, it makes a delicious party dip that will have your friends crowded around the appetizer table. Especially if its football season. This dip is best when it’s hot so people will forgive you if you decide to gobble it all up quickly. The only thing that could go wrong with this dip is you could run out of nacho chips. But I guess that’s what they made spoons for, right?

Hot Nacho Dip

Ingredients

  • INGREDIENTS
  • 1 pkg (8 oz) cream cheese, softened
  • 1 can refried beans
  • 1 lb lean ground beef
  • ¼ cup water
  • 1 pkg taco mix
  • 2 cups cheddar cheese , grated
  • Nacho chips

Instructions

  1. Cook your ground beef in a frying pan. When the beef it cooked completely, stir in the taco mix. Add some water to help combine the taco mix with the beef but you do not want a wet mixture. Adjust the water amount as needed. Allow the cooked ground beef to cool slightly.
  2. Pick some microwave or oven proof serving dishes. You can choose individual serving size if you plan to use this for make ahead lunches for the week or a larger dish like a pie plate if you plan to serve it to a group of people.
  3. Spread the softened cream cheese in the bottom of your dish. Next, spoon the refried beans on top of the cream cheese, spreading it evening over top. Evenly distribute the ground beef on top of the refried beans then top with shredded cheese.
  4. When you’re ready to eat, simply heat in the oven at 350 F for 20 minutes, until the cheese is bubbly, or heat in the microwave for about 1 minute.
