Mix the eggs, milk, vanilla and sugar together in a bowl and pour into a pie plate or other shallow but flat dish.

Heat a non-stick frying pan over medium heat. Spray pan with no stick spray such as PAM.

Dip slices of bread in egg mixture making sure to coat both sides. Lay in heated pan.

Sprinkle the cinnamon on top of the bread so it sticks to the side that is not cooked yet.

Cook for about 5 minutes on each side, until the sides are nicely browned. Leave a few extra minutes if your slices are thicker and you want to make sure the middle is not soggy.

Top with fresh fruit, whipped cream, maple syrup or your choice of toppings.
