Chocolate Chip Banana Bread
  • 1 ½ cup flour
  • 1 tbsp Baking powder
  • ½ tsp Salt
  • 1 tsp Cinnamon
  • 1/3 cup vegetable shortening
  • 2/3 cup sugar
  • 2 Eggs
  • 1 cup Mashed banana (about 3 ripe bananas)
  • 1 cup semi-sweet chocolate chips (or more if you like)
  1. Preheat oven to 350° F.
  2. Using a hand mixer, beat together the vegetable shortening, sugar and eggs. In a separate bowl, combine flour, baking powder, salt and cinnamon.
  3. Add the dry ingredients in with the wet. Add the mashed bananas and mix until everything is just combined.
  4. Pour batter into greased loaf pan and cook 60 to 70 minutes. Insert a tooth pick to test for doneness at the end.
  5. Allow the bread to cool in the loaf pan for 10 minutes before transferring it to a cooling rack to completely cool.
