Mix together flour, sugar, cinnamon, baking powder and salt in a large bowl.

Add dried fruit, seeds, raisins, crushed pineapple, apple and carrots. Stir to combine.

In separate bowl, whisk together the eggs, oil and vanilla.

Combine the wet ingredients together with the dry ingredients and blend well. The mixture will be very thick.

Scoop the mixture into paper lined muffin tins.

Bake at 350 degrees for 30 minutes.
