Have you ever attended a Girls Weekend? I just came back. Yes, I am SO lucky to have a girlfriend that hosts a Girls Weekend each year at her camp. It’s kinda like Vegas – what happens there, stays there. I can’t disclose who attends, share any pictures (aside from beautiful sunsets) or even tell you where it’s located. It’s on a secluded island and it’s by invite only. Men are not allowed. However there were talks about inviting a couple cute young men next year to help with all the heavy lifting and serve the ladies drinks.

The first year I was invited I offered to help with a meal. I didn’t understand the whole “team” thing so I kinda took over but that meant the other ladies on my team didn’t have to do anything but help clean up and I think they were ok with that. In my true style, I went overboard and put on a HUGE spread. It totally worked to my advantage however as I was invited back again the next year, and then again the following year. I think I have a standing invitation to this fantastic event each year.

Girls’ Weekend means there will be swimming and sun bathing, camp fires, games and some delicious beverages – and LOTS of laughs. I literally run out of the house with my sleeping bag and pillow when I relinquished my mom duties for the weekend. The sunglasses go on and the tunes get turned up really loud as I cruise to the pick up point. Once you’re on that island, there’s no getting off. Unless you want to swim. But really. Why would you want to leave??

I may have already said too much. I don’t want to jeopardize my invitation for next year so I’ll tell you about this amazing Spicy BBQ Chicken Marinade instead. I used this marinade on the chicken for this year’s dinner and it was A-M-A-Z-I-N-G!!! I cut up the chicken the night before into smaller portion sizes and put everything in a large resealable bag. Everything sat in the fridge overnight and I put the chicken on wooden skewers right before putting them on the grill to cook. This made the chicken cook a lot more quickly – which is a big deal when you’re serving up food for 20-25 ladies. You can also leave the chicken breasts whole.

This recipe can be a bit spicy if you’re not big on hot chili flakes. Just cut back the amount you sprinkle in there, especially if you’re letting it marinade for the full 24 hours. It’s so good. The chicken was definitely the star at the dinner table with people going back for seconds and even thirds. Leftovers the next day were just as delicious eaten cold with garden and ceasar salad. This marinade would be perfect for people who batch cook chicken on Sundays to help with meal planning.

Spicy BBQ Chicken Marinade

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 6 servings

Ingredients

  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon hot pepper flakes or less
  • 3 lb chicken breasts boneless skinless

Instructions

  1. In small bowl, combine oil, garlic, oregano, salt, pepper and hot pepper flakes; pour mixture into a zip lock bag.
  2. Place chicken in zip lock bag. Seal bag and move the chicken around so completely covered by marinade.
  3. Place chicken in fridge for at least 4 hours. Can be refrigerated for up to 24 hours. The longer the better.
  4. Cook on greased grill over medium heat for about 20 minutes or until chicken is cooked through and juices run clear.
  5. Transfer chicken to cutting board and cover loosely with foil and let stand for 10 minutes.
