I’ve been known to serve breakfast food items for dinner. Then I (maybe?) cross a line and serve dessert for breakfast? Sure they’re waffles – so that automatically classifies them as a breakfast food, right? Work with me on this one… sure the family had no complaints on this one. Who wouldn’t want these amazing brownie waffles, regardless of what time of day it is.
I had a friend come over for a Roast Beef dinner later that day and she feel like she missed out, she would have preferred coming for breakfast! HA!
So chocolate waffles that taste like brownies – they even got really crispy so it was like the edges of the brownies, you know, the pieces everyone fights over? Top these waffles with a decadent strawberry sauce and whip cream? Maybe add some fresh strawberries and perhaps other fruit? Are you drooling yet? Maybe you should go make some. Believe me, your family will thank you.
This recipe was inspired by Kitchen Meets Girl.
INGREDIENTS
2 cups strawberries
1/4 cup honey or agave syrup
juice from one lemon
1-2 tbsp cornstarch
½ cup unsalted butter
3 oz dark chocolate, chopped
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup milk
1 cup all-purpose flour
2 tbsp cocoa powder
2 tsp baking powder
½ tsp salt
DIRECTIONS
- Put the strawberries into a small pot over medium heat. When the berries start to release their juices, add in the sugar and lemon juice and honey. Continue cooking until berries become soft and can be mashed easily with a fork. Add cornstarch little by little until sauce thickens to desired consistency.
- Over low heat, melt butter and chocolate in a small saucepan. Remove from heat and stir in sugar. Whisk in eggs and vanilla, followed by milk. Add in the flour, cocoa powder, baking powder and salt until just combined.
- Preheat your waffle iron. Scoop batter onto iron and cook. Serve warm with fruit sauce.
