There’s something about this Baked Berry Oatmeal that is so comforting. Oatmeal has always been a food of comfort for me but baked oatmeal in the oven is like nothing else. This baked berry oatmeal fills the house with delicious smells within minutes of being put in the oven. It teases us of the things to come. Having the family gather around the breakfast table, filling our bowls with goodness while sipping our cups of coffee and glasses of milk. Did I mention you could make it the night before?

Over the past 12 months I’ve come appreciate a slower, more reflective life. Quiet chats with friends over hot beverages, tending my vegetable garden and our rare days on the beach from sun up to sunset. Everyone changes over time, this past year feels a little more dramatic then most. I’ve really come to admire my cousin’s minimalist life style.

Although my cousin, Julieanne, may not like to own “stuff”, she has one of the most enriched lives a person could ever hope for. Her and her husband own this beautiful log home they built with their own two hands furnished by projects she put together herself. She spends her days caring for her young ones and creating the most amazing artwork. It’s simple. It’s tranquil. It’s perfect.

As you may gather, I’m a little envious of her. While my kids are never far from their electronic devices, her boys are out in the backyard building tree forts and cabins. Would you believe, she doesn’t even own a television?? Evenings are spent with family reading books or doing puzzles.

Baked Berry Oatmeal & A Simple Life

Ingredients

  • 3 cups old fashioned rolled oats
  • ¾ cup brown sugar , divided
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 tablespoon of chia seed (optional)
  • 1 teaspoon vanilla
  • 1/4 cup vegetable or canola oil
  • 3 eggs
  • 1 1/2 cups milk
  • 1/4 cup greek vanilla or plain yogurt
  • 1 cup berries , fresh or frozen

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Combine the eggs, vegetable oil, milk, Greek yogurt and vanilla together in a bowl. Whisk together well.
  3. Add in the rolled oats, ½ cup brown sugar, baking powder, salt and chia seeds. Stir together until the dry ingredients are completely mixed in.
  4. Pour half the mixture into a greased 9x9 inch baking pan. Scatter the berries over top of the oatmeal mixture, reserving a few to place on top. Spoon the remaining oatmeal mixture over top of the berries. Place the rest of the berries on top pushing them in gently to the oatmeal mixture.
  5. If you are baking right away, sprinkle an additional ¼ cup brown sugar on top.
  6. If you plan to bake it the next day, cover the pan with plastic wrap and store in the fridge overnight. Sprinkle the brown sugar on top right before baking.
  7. Bake for 40 minutes until the oatmeal is set. You can tell by giving the pan a shake. When it stops middle doesn’t jiggle any more, it’s cooked all the way through.
