#68 – Rustic French Toast Recipe

Do you feel like the days, weeks, months and even years just fly by? I sure do. That’s why I try to enjoy the company of my family as much as possible by enjoying  Sunday breakfast with my family. My 16 year old son is at the age that he’s a moving target and difficult to pin down to spend time with. Between the girlfriend, friends, job and school, family is last on his priority list. I’m told this will only get worse the older he gets so I try pin him down at the table as often as possible. Sometimes I have pancakes or make a batch of muffins. I was able to entice him out of bed earlier then normal with this french toast recipe.

Usually I’ll reach for the loaf of Wonder bread I always have on hand but I had a loaf of Italian bread that needed to be used up before it got too stale. I watched a TV show on Food Network a few years back where a chef used croissants for their French Toast. I’d still like to try that but it inspired me to reach for that loaf of Italian bread to make my French Toast. I threw in some extra ingredients into my standard recipe and it was DELICIOUS!

Rustic French Toast

Ingredients

  • Loaf of day old Italian bread (or other crusty bread), cut into 1” slices
  • 4 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 tbsp sugar
  • Cinnamon

Instructions

  1. Mix the eggs, milk, vanilla and sugar together in a bowl and pour into a pie plate or other shallow but flat dish.
  2. Heat a non-stick frying pan over medium heat. Spray pan with no stick spray such as PAM.
  3. Dip slices of bread in egg mixture making sure to coat both sides. Lay in heated pan.
  4. Sprinkle the cinnamon on top of the bread so it sticks to the side that is not cooked yet.
  5. Cook for about 5 minutes on each side, until the sides are nicely browned. Leave a few extra minutes if your slices are thicker and you want to make sure the middle is not soggy.
  6. Top with fresh fruit, whipped cream, maple syrup or your choice of toppings.

  1. Yum! Your French toast looks awesome! My kids always get super excited about french toast 🙂 They’re still young but I’m so not looking forward to when they’re so hard to pin down for some family time 🙁

    • It takes a bit of creativity too keep the teenagers at home but I find incorporating their friends and good food helps so you get to see them. As a food blogger, I’m sure you’ll be up for the challenge (and fun) of coming up with good food to tempt them. 🙂

  3. Hey Diana, french toast is the ultimate isn’t it. Just curious what your extra ingredients that you threw in? Although your pictures look amazing this sounds like a pretty standard recipe. Just wondering if perhaps I’m missing something on my screen?

    • So I’m a little embarrassed to say, but you’re absolutely right Kellie. I grew up with my mom making french toast with just eggs and milk. It’s only been over the past few years that I decided to add some extra flavour to french toast by adding vanilla extract, sugar and cinnamon. I never realized that’s who they should have been made all along. What else have I been missing out on my entire life??
