#45 – Sautéed Rosemary Mushrooms

Are you a fan of mushrooms or not so much? I have an obsession with mushrooms. Especially these Sautéed Rosemary Mushrooms. They turn so sweet and tender when you cook them in a pan with butter and olive oil. I could eat the entire bowl of mushrooms just as they are. In fact, that’s exactly what happened after I finished taking these pictures of my Sautéed Rosemary Mushrooms.

So my intention for these mushrooms were to go along with my BBQ’d steak. Unfortunately, once I took one bite, well… let’s just say they didn’t make it to the dinner table. I don’t have one ounce of guilt because I know the rest of my family is not a big fan. Maybe if I had let them sample some of these, I could get them to change their mind. Oh well, next time! Because I guarantee there will be a next time for these mushrooms.

I used rosemary with the mushrooms this time, but you can experiment with any fresh herbs really. Thyme would taste great with the mushrooms too. I can’t want for the warmer weather to get here so I can get my herb garden growing outside and experiment with more herb combinations.

Sautéed Rosemary Mushrooms

Ingredients

  • 3 tbsp olive oil
  • 3 tbsp butter
  • 1 lb sliced mushrooms
  • 1 clove garlic , finely chopped
  • 2 shallots , finely chopped
  • sprig of rosemary
  • salt and pepper to taste

Instructions

  1. Heat olive oil and butter in a large saucepan over medium heat.
  2. Add the mushrooms, garlic, shallots, salt, and black pepper in the pan and cook until mushrooms are lightly browned, about 5 minutes.
  3. Reduce heat to low and add in the rosemary.
  4. Cook for an additional 5 minutes, until mushrooms are tender.
