#43 – Slow Cooker Chicken Stroganoff

Don’t you love coming home to a hot meal ready to go? Having a yummy meal, like this slow cooker chicken stroganoff is almost as good as having my husband make supper for me. Almost.

In the past I’ve usually stuck with using my slow cooker for meatballs, spaghetti sauce, and  cooking whole chickens. After checking out ayearofslowcooking.com, the sky really is the limit.  From breakfasts, to dinners and even desserts, there are tons of ideas to use your slow cooker to save you time and money!

I can see  adding mushrooms or frozen peas to this recipe in the future for another flavour dimension, plus I love to try sneak vegetables into a meal at every opportunity.  I was a little skeptical at first, a sauce comprising of a can of cream of chicken soup and sour cream?  The recipe doesn’t call for milk, but is similar to my Chicken Enchiladas Casserole, the sauce can be thinned out by adding a bit of milk if you find it too thick.

Slow Cooker Chicken Stroganoff

Ingredients

  • 1 ?tbsp onion powder
  • 2 ?tsp dried basil
  • 1 ?tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 4 pieces of boneless skinless chicken , cubed
  • 2 tbsp butter
  • 1 pkg (8 oz) cream cheese
  • 1 can cream of chicken soup

Instructions

  1. Place the butter in the slow cooker. Mix the herbs in a separate bowl. Coat the chicken in the herb mixture and place the chicken in the slow cooker. Cook on low for 5-6 hours.
  2. Cube up the cream cheese and place in the slow cooker along with the cream of chicken soup. When the cream cheese is soften, stir in with the chicken to make a creamy sauce.
  3. This chicken can be served with rice or egg noodles for a quick and easy dinner.
