#25 – Oatmeal Flax Blueberry Muffins

I was on a mission to find some healthy(er) alternatives to the sugar healthy snacks I usually make for my family. The #1 treat my family enjoys are my blueberry muffins. It makes lunches a lot easier if I make a batch of muffins on Sunday and I wrap them individually in preparation for the week ahead. That’s one less snack I need to figure out for their lunch.

These muffins were just lovely, especially with the fresh blueberries and the delicious crumble on top. Although they were not as sweet as my regular muffins, they made for a delicious treat. I’m sure people could find even more ideas to make these muffins even more healthy (ie. Replace the oil with apple sauce), I’m happy with the results. Sneaking flax seed into my family’s diet is an added bonus.

Healthy Oatmeal Flax Seed Blueberry Muffins

Oatmeal Flax Blueberry Muffins

INGREDIENTS
1 cup rolled oats
1 cup buttermilk
½ cup vegetable oil
2 egg
3/4 cup brown sugar
1 teaspoon vanilla
1 cup + 2 tablespoon flour
2 tbsp ground flax seed
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tbsp salt
1 cup fresh blueberries

 Crumble Top
2 tbsp butter, melted
2 tbsp flour
2 tbsp brown sugar
2 tbsp rolled oats
½ tsp cinnamon

INSTRUCTIONS

  1. Preheat the oven to 350 degrees. Combine the oats and buttermilk in a mixing bowl. Let the oats soak for 20 minutes. Add the oil, eggs, brown sugar, and vanilla into the mixture and whisk together.
  2. In a separate bowl, mix together the flour, flax, baking powder, baking soda, and salt. Mix together the wet ingredients with the dry.
  3. Gently fold the blueberries into the remaining batter and divide evenly between the muffin tins. Scoop batter into muffin liners.
  4.  In a small bowl, mix together the flour, brown sugar and rolled oats. Add in the butter and stir together to create a crumble. Top each muffin with about 1 tsp of the crumble. Gently press the crumble into the muffin mix before putting in the oven.

    • I’m sure you could swap the vegetable oil for coconut oil. I believe it’s a 1:1 ratio so instead of using 1/2 cup of vegetable oil, use 1/2 cup of coconut oil in it’s liquid state. Let me know how they turn out!

      • I highly adrmie you for keeping healthy recipes on your blog. I am sure you are eating mainly healthy meals too. I’m trying so hard to keep it that way while I still enjoy what I like. This squares look very delicious!
