#6 – Wild Rice Salad

Salads don’t always have to be about the lettuce.  In fact, I’ve been working at finding new and delicious recipes that would make a fresh and light summer salad meal. I introduced my daughter to chick peas with a chick pea salad. Now she loves them! Not to mention they are a great source of protein.

The dressing was inspired by a dressing in Ina Garten’s collection and it’s as amazing as the reviews stated. Start with the base of wild rice and add the fresh vegetables of your choosing. Fantastic!

Wild Rice Salad

Ingredients

  • Salad
  • 2 cups water
  • 1/2 tsp walt
  • 1 cup wild rice
  • 1 cup cherry tomatos , halved
  • 1/2 red pepper , diced
  • 1/2 yellow pepper , diced
  • 2 green onions , chopped
  • Dressing
  • 1 cup olive oil
  • 1/2 cup white vinegar
  • 1/4 cup grated parmesan cheese
  • 1 tbsp white sugar
  • 1 tsp salt
  • 1 tsp celery seed
  • 1/2 tsp pepper
  • 1/2 tsp dry mustard
  • 1/4 tsp paprika
  • 1 tsp minced garlic

Instructions

  1. Bring water to a boil with salt and add rice. Cook rice over low heat until tender, about 45 minutes. Drain any remaining liquid.
  2. Combine all the ingredients for the dressing in a mason jar and shake until well combined. Keep the dressing in the fridge until you’re ready to serve.
  3. Combine the rice and the remaining salad ingredients in a bowl. Pour about half the dressing over the salad and stir. Cover and keep in the fridge until ready to serve. Toss right before serving and add more dressing if needed.
