The beautifully warm summer temperatures are encouraging us to use our BBQ instead of heating up our kitchen using the oven. I spent an hour putting together some marinated chicken pieces and this Greek Lemon Marinated Chicken was one of the recipes.

I recently purchased a bulk package of boneless, skinless chicken breasts and decided to try freeze the chicken breasts in this Greek Lemon Marinate. It took less then an hour to put together a few different batches of chicken and now dinner is ready in a flash for those busy work nights! I used boneless, skinless breasts but any type of chicken pieces will work.

I cut the chicken breasts – either in small cubes for shish kabobs or in half for a better portion size for our family members. I dumped the chicken pieces and the marinate ingredients into large plastic freezer bags and shook the chicken around in the bag so it was well coated. I laid the marinated chicken packages out flat on a large cookie sheet and placed them in the freezer. Once they were frozen, they were easy to stack in my freezer. I placed the frozen Greek Lemon Marinated Chicken in the fridge to defrost the night before I was going to cook it up for dinner.

What a wonderful and quick dinner to enjoy when you get home from work. These Greek Lemon Marinated Chicken kabobs cooked up very quickly on the grill. Serve with a side salad or some grilled vegetables and you have the perfect healthy summer dinner.

Greek Lemon Marinated Chicken

Ingredients

  • 1 ½ lbs chicken
  • 3 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil
  • 2 teaspoon garlic
  • 2 teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon coriander
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Place the chicken in a large ziplock bag.
  2. Mix the marinade ingredients in a small bowl. Pour the marinade over the chicken in the bag. Seal the bag and shake to even distribute over the chicken pieces.
  3. Marinate the chicken in the fridge for at least 1 hour for up to 12 hours.
  4. For freezing, place the bag on a flat surface like a cookie sheet and distribute the chicken out into a single layer inside the bag. This will allow the chicken to defrost more quickly and evenly.
